Kitchen Tales: I’m in love with a Spatula!

I am picky about my eggs.
I only eat them three way: scrambled, boiled and deviled.
Fortunately, my family loves scrambled eggs and I don’t run a breakfast restaurant, so my limited egg expertise has never been a problem.
But let me tell you what has been; the amount of remaining egg left over in the pan, after I scramble them.
For nearly twenty years, my partner, and once upon a time his mother would complain about how much fried on egg was left in the pan, once I was done.
I would use oil in the pan prior to scrambling. I’ve used bacon drippings, butter and olive oil; all with the same result.
Part of the problem is that I’m picky about my eggs. So after I’ve scrambled them and scraped all of the fluffy pieces of bouncy scrambled egg on to the plate; I don’t want anything to do with the overly fried, overly browned flaky pieces that remain in the pan. Thus, I would run soapy, hot water in the pan to loosen the stuck on egg and let ride. That is until Christmas 2020, when everything changed.
Usually I’m playing the role of Santa, and Santa doesn’t normally get Christmas gifts rained down on his face, but this year my mother-in-law asked me what I wanted for Christmas. So I answered like anyone would. I said I wanted a new set of pots and pans. (And I desperately need them. I would curse my cookware with every meal). I gave her the link and didn’t think anymore of it. I really didn’t expect to get them, because they were pricey, but she came through and I got a set of Gotham Steel Ceramic Coated pots and pan.
Suffice it to say, I was ecstatic. And I was responsible and read the instruction, and soon realized that I can’t use regular metal spoons, fork and spatulas for these fancy pants pots and pans; they would damage the ceramic surface. I need wooden ones or silicone ones; which led me to Amazon (Of course); where I found a set of silicone over-sized three pronged forks and then an entire set of silicone cooking utensils. I ordered it and it arrived in no time (Of course). And they were awesome. I had utensils that I didn’t even need. It was great.
Fast forward to after the new year. The holidays are way past over and everything is back to…
